Probably not for
Ceramic blades, single-bevel specialty knives, scissors, major chip repair or anyone who needs fully adjustable sharpening angles.

Chef'sChoice 4643 AngleSelect / ProntoPro
A manual diamond-disc sharpener with two angle choices and a shared finishing slot. The gray listing is associated with model 4643009.
Pros
- Accommodates a mixed collection of compatible 15- and 20-degree knives
- Includes a documented path for compatible serrations
Cons
- You must identify the correct angle before choosing a slot
- Not recommended for ceramic knives or single-sided specialty blades
Who it’s for: The more useful starting point when several blade geometries share one kitchen. Skip it if you want to set arbitrary angles or preserve a specialty edge its manual excludes.

A stainless-steel sharpener with separate coarse and fine modules, a fixed geometry and non-slip rubber feet.
Pros
- Straightforward two-module layout
- Suitable for either hand
Cons
- No selectable sharpening angle
- Smooth-edge specification excludes treating it as a bread-knife sharpener
Who it’s for: A focused option for a small set of compatible plain-edge knives. Skip it if your drawer includes serrations or several angles that you intend to maintain separately.

Write down the model of your chef knife, paring knife and any other blade you expect to sharpen. Check the knife maker's care guidance for edge geometry and approved maintenance methods. A familiar brand or country of manufacture is not enough: the knife in your drawer may have a different bevel from another knife carrying the same logo.
Then separate everyday maintenance from repair. A blade that has gradually lost its bite is a different problem from a broken tip or a visibly damaged edge. For the latter, ask a qualified sharpening service what repair is appropriate before buying a simple countertop tool. Spending more on the sharpener does not automatically make the repair suitable for home use.
Angle labels need careful reading
The 4643 provides a choice between 15- and 20-degree classes. That choice is helpful only when you know which path matches the blade. ZWILLING describes its preset as an approximately 35-degree cutting angle. Do not read that as an adjustable 35-degree-per-side setting or directly rank it against the other maker's labels: angle descriptions can refer to different parts of the edge geometry.
If preserving a particular factory bevel is the goal, confirm compatibility with the knife manufacturer instead of choosing whichever number looks smaller. A preset system removes the need to hold a freehand angle, but it also limits what you can ask it to produce. Someone who needs precise control over a variety of unusual bevels should consider a different sharpening method.
Three slots do not mean three passes through everything
The Chef'sChoice manual routes 15-degree knives through stages 1 and 3, and 20-degree knives through stages 2 and 3. The first two slots are alternatives. Its serrated-blade procedure uses stage 3 alone. This explains why a listing can describe a two-step process while the body has three working slots.
Keep the instructions with the tool, especially in a shared kitchen. A small note identifying which of your knives uses which approved path is more useful than asking every family member to remember a sequence. Do not transfer pressure or stroke instructions from one sharpener to another; use the booklet supplied with the exact model.
Serrated and specialty knives change the decision
A bread knife can make this comparison less close. The 4643 manual includes a serrated procedure; TWINSHARP Select is specified for smooth cutting edges. Even then, the bread-knife maker's restrictions still matter. A sharpener's broad compatibility claim is not permission to disregard instructions for a particular serration pattern.
Chef'sChoice also excludes single-sided Asian specialty blades and does not recommend ceramic knives. Neither product is the right default for maintaining scissors. If those are the items that need attention, buying either unit for its ordinary kitchen-knife capability leaves the original problem unresolved. Match the tool to the difficult blade before considering how many easier blades it can also handle.
The practical purchase decision
Choose the 4643 when angle choice or a compatible serrated knife is the reason for buying. Choose TWINSHARP Select when your plain-edge knives suit its fixed geometry and you prefer a simpler selection process. Neither a diamond label nor a stainless-steel body establishes which produces a better edge in your hands; that would require a controlled comparison with the same knives and technique.
